Sara's Burnt Basque Cheesecake
Heavy cream (35%) | 2 cups (473 mL) | |
Cream cheese | 4 bricks (250 g) | |
Eggs | 6 large | |
Sugar | 1 - 1 1/2 cups (1 cup for less sweet) | |
All purpose flour | 1/3 cup | |
Vanilla extract | 1 Tbsp | |
Salt | 1 Tbsp |
Made for a 10” spring form pan.
Instructions
- Preheat Oven: 400oF
- Mix the cream cheese and the sugar together, until you can’t feel the grains of sugar when touching.
- Add in eggs one at a time until incorporated. If you put more than one it might splash.
- Add in heavy cream and vanilla extract and salt.
- Add flour at the end.
- Once all mixed, pour into your 10” springform pan lined with parchment paper. Note: the parchment paper should be higher than the pan by 2 inches at least, while cooking this batter will rise above the pan level and will settle after cooling. Use 2 square pieces of parchment.
- Bake at 400oF for 1 hour.
- When you take it out it should be inflated, wait for it to cool completely before serving.
